There are two major talent builds that are primarily seen being used by a Rogue doing DPS in raids. You won't be surprised to learn that neither of them are in the Subtlety talent tree. Before you dive in, if you're going to be testing a lot of builds it could get rather expensive having to Regem and Redo talents or Enchants; if you're short on gold check out the Secret Gold Guide to learn how to earn over 1000 gold an hour.
This is the basic combat raiding build that has proven results. For this build you want to have a slower main hand and a faster offhand. Deadly poison on the offhand and Instant poison on your main hand. If you don't do Swords you can just change out to the appropriate weapon type you are using in the combat tree.
1/3 Vile Poison and 4/5 Improved Poisons have shown best results, however, you can tweak this build to the gear level and playstyle you prefer. I have seen some claim that the best build for Icecrown Citadel involves going to Serrated Blades in the Subtlety Tree to get the 9% armor ignore, but I've not seen any conclusive data on this.
You can test it yourself though, here's a link to that variation: 7/51/13 Ignore Armor Variation. Remember, with this build people tend to go away from Eviscerate as a finishing move and switching to keeping Rupture up after Slice and Dice. I've heard it does better at higher end gear levels T10+.
The Rotation
The Rotation you're looking at is keeping down Blade Fury, Killing Spree, Adrenaline Rush, when applicable and the rotation is Sinister Strike, get Slice and Dice Up and Keep it Up, and 5 point Eviscerates.

Killing Spreed, Sinister Strike, Eviscreate (replace with Fan of Knives if you want AoE)
This is the basic template for Mutilate Daggers build. The theoretical higher dps build doesn't put 2 points into Opportunity in the Subtlety Tree but rather 2 points into Relentless Strikes, but you can make that decision yourself.
One important thing about Mutilate Daggers is that you come out of Stealth to start every fight and use Vanish whenever possible to activate the Overkill buff which will allow you to regenerate energy 30% faster.
Your main hand should have the highest dps dagger in it, regardless of speed. The faster of either weapon should have Deadly Poison and Instant Poison on the slower one regardless of which hand you put your weapons in. The DPS is more important than speed of any weapon so always choose the higher dps weapon.
There is also a Subtlety variation of this build to get Serrated Blades for the 9% armor ignore that looks something like this Mutilate Subtlety Armor Ignore Build You'd have to test it to see if it's better for you or not.
The Rotation
Keep Hunger for Blood and Slice and Dice up at all times in that order.
Shiv only at start if you need to apply poison-> Mutilate -> Envenom
If you don't have anyone in your group or raid applying a bleed effect to the Enemy, Hunger for Blood should be your priority and you'll have to either Garrote at start or Rupture the enemy to keep it up.
Glyphs
Hunger for Blood, Mutilate, and choose whatever one you want as a third for AoE get Fan of Knives.
